Flaxy Apple PB Bake + Breakfast Pudding

I had a few apples laying around, so I decided to make them into an apple bake! I felt like the apples were too sweet to eat on their own, so I turned them into dessert (I never know what kind of apples I like, there's too many to choose from!) Peanut butter and apples are basically the perfect combination.. as is peanut butter with basically anything (celery, chocolate, a spoon..). We have peanut butter addictions here, we can't control ourselves!!
This made a small portion and a nice, light dessert. It was great on my breakfast "pudding" and I bet it would be awesome on vanilla icecream!


Ingredients:
4 small apples
1 T flaxseed meal
1/4 cup shredded coconut
1/4 cup rolled oats
1/4 cup peanut butter
1 tsp cinnamon
1/2 tsp vanilla


First, chop up those apples into little pieces!


Then, mix all of your ingredients together. The peanut butter was a bit difficult to mix in, try heating it first!
Then, bake at 350° for 15-20 minutes.




Breakfast "pudding"
I told you the other day what my breakfast usually consists of, well this is another variation! What I do is mash up 1/2 a banana in a bowl, add in almond milk and about a scoop of protein (I use vanilla pea protein) powder and mix! It creates a nice smooth consistency and I just top with some chia seeds! Since I had this apple bake, I decided to top it with that and it was perfect!

  1. This Flaxy Bake looks so tasty! It reminds me of a chewy granola. Sometimes for breakfast, I do something similar, but a lazy version of it: almond butter and apple processed to a mush and sprinkled with flaxseed :D

  2. I want almond butter so bad! We never eat any others than peanut because they're so expensive :/
